Acta Univ. Agric. Silvic. Mendelianae Brun. 2026, 74(3), 65-77 | DOI: 10.11118/actaun.2026.005

This study aimed to evaluate the meat yield and physicochemical properties of common pheasant (Phasianus colchicus), with particular emphasis on sex- and muscle-specific differences. A total of 40 birds (20 males and 20 females) reared under natural conditions were analysed. Males exhibited significantly higher live body weight than females (1361.6 ± 207.7 g vs. 961.4 ± 88.1 g; P = 0.002), as well as higher breast (354.5 ± 45.4 g vs. 242.6 ± 11.9 g) and thigh muscle weights (262.7 ± 40.7 g vs. 180.6 ± 16.1 g; P = 0.001). Pheasant meat was characterised by high protein content, very low intramuscular fat, and...

Acta Univ. Agric. Silvic. Mendelianae Brun. 2026, 74(3), 79-89 | DOI: 10.11118/actaun.2026.006

Between 2022 and 2025, five rainbow trout lines of different origins were tested in aquaculture, including two lines with genetically selected resistance to pathogens. Morphometric traits, tissue composition, haematological parameters, and mortality were evaluated. The Czech line from Hynčice showed the best overall condition, a higher proportion of energy reserves, and stable growth throughout the year. The Italian lines exhibited stable growth but had the lowest immune indicators and the highest mortality. The Danish lines showed balanced performance; however, their growth was dependent on water temperature. Genetic resistance in the Danish improved...

Acta Univ. Agric. Silvic. Mendelianae Brun. 2026, 74(3), 91-98 | DOI: 10.11118/actaun.2026.007

The aim of this study was to evaluate the soil chemical property changes under two types of grass communities (alpine grasslands) at three locations (Velký Máj, Jelení hřbet, and Břidličná) in the Jeseníky PLA. The effect of different types of intervention (burning, mineral fertilization N60PK, sward removal, control without management) was determined in the form of small-plot trials during three years. Significant differences were found among the management treatments with respect to exchangeable soil reaction (the pH ranged between 2.33 and 3.62) and the contents of calcium, magnesium, phosphorus, and potassium; as expected, the highest...

Microencapsulation of Muntingia calabura Leaf Kombucha: Effects on Microbial Viability, Antibacterial Activity, and Antibiotic Interactions

Acta Univ. Agric. Silvic. Mendelianae Brun. 2026, 74(3), 99-106 | DOI: 10.11118/actaun.2026.009

Kombucha is a fermented beverage rich in organic acids and bioactive compounds with potential antimicrobial properties; however, its microbial stability remains a challenge. This study evaluated the effects of microencapsulation on microbial viability, antibacterial activity, and antibiotic interactions in Muntingia calabura leaf kombucha. Microencapsulation was performed using maltodextrin, skim milk, and gum arab, followed by freeze-drying. Microbial viability was assessed using plate counts, antibacterial activity was evaluated by agar diffusion against Escherichia coli and Staphylococcus aureus, and antibiotic interaction was examined using a modified...

Peanut sprouts (Arachis hypogaea L.) are the germinated product of peanut seeds - a legume rich in protein, unsaturated fatty acids, and bioactive compounds. The germination process not only changes the chemical structure but also activates the endogenous enzyme system, thereby significantly improving the nutritional value and antioxidant capacity of the seeds. Many studies have recorded a significant increase in phenolic compounds, flavonoids, resveratrol, and free radical scavenging activity (DPPH) during the germination stage. In addition, the content of essential amino acids, minerals (K, Mg, Zn, and Fe), and lipids beneficial to health were also...
