NUTRITIONAL COMPOSITION, BIOLOGICAL ACTIVITIES, AND POTENTIAL APPLICATIONS OF PEANUT SPROUTS (ARACHIS HYPOGAEA L.): A REVIEW

Peanut sprouts (Arachis hypogaea L.) are the germinated product of peanut seeds - a legume rich in protein, unsaturated fatty acids, and bioactive compounds. The germination process not only changes the chemical structure but also activates the endogenous enzyme system, thereby significantly improving the nutritional value and antioxidant capacity of the seeds. Many studies have recorded a significant increase in phenolic compounds, flavonoids, resveratrol, and free radical scavenging activity (DPPH) during the germination stage. In addition, the content of essential amino acids, minerals (K, Mg, Zn, and Fe), and lipids beneficial to health were also improved, reflecting the high potential application of peanut sprouts in functional foods. Germination methods and post-harvest treatments, such as freeze-drying, convection drying, or ultrasonic extraction, have been shown to strongly affect the final biological activity. Therefore, this review focuses on systematizing studies on mineral composition, fatty acids, amino acids, germination conditions, and potential applications of peanut sprouts, aiming to provide a comprehensive view to serve the orientation of exploitation and development of functional food products from this raw material source.
