VLIV VĚKU NA SENZORICKOU KVALITU MASA KOHOUTKŮ NOSNÉHO TYPU

The aim of the study was to evaluate the sensory quality of carcass of layer males ISA Brown. The males were fattened to 90 and 132 days. In both ages samples of breast and thigh were used for the sensory evaluation.
The birds were provided by a private producer. There were 20 birds in each experimental group. Both the groups were housed on deep litter and fed a commercial broiler diet. The first group was slaughtered at 90 days of age at a processing plant, the second group continued fattening till 132 days at the Department of Animal Breeding. At 132 days, the birds were slaughtered at the in-house abattoir.
The sensory evaluation was carried out at the sensory laboratory at the Department of Food Technology at MZLU in Brno. The sensory evaluation was carried out by the trained staff of the Department. Samples were evaluated by the sensory profile method with description of edge points.
The higher age had highly significant (p < 0.01) effect on tenderness of the breast muscle (meat from the older birds was assessed as tougher). The age had significant effect (p < 0.05) also on the colour of thigh muscle (the meat of the older birds was assessed as darker). Thus, the evaluators concluded the shorter fattening period as more favourable.
However, as for carcass weight, weight of carcass parts and processing at an automatic slaughtering line, the longer fattening period (132 days) seems to be more convenient. It is also necessary to take into account increased cost and marketing possibilities for such products.

The aim of the work was to compare the course of agro-ecological indicators according to the internationally acknowledged parameters - the balance of vine bunches, the berry balance, the weight of vine bunches, the berry weight in 7 varieties of vine in three resistant white varieties Merzling, Malverina and Hibernal and in one blue variety - Medina, then in classical varieties Aurelius, Chardonnay and Muscat Moravian in two locations Perna (sub-region Mikulovice) and Sadek (sub-region Znojmo). The evaluation of the grape quality was carried out in accordance with common standards used in the Czech Republic. The following parameters were monitored The agro-ecological indicators were compared according to the internationally acknowledged parameters in the work - the balance of vine bunches, the berry balance, the weight of vine bunches, the berry weight for 7 varieties of vine in three resistant white varieties Merzling, Malverina and Hibernal and one blue - Medina, then in classical varieties Aurelius, Chardonnay and Muscat Moravian in two locations Perna (sub-region Mikulovice) and Sadek (sub-region Znojmo). As concerns the balance of vine bunches and berries, remarkable differences between these two areas have been proved. The weight of vine bunches has shown no statistically remarkable difference. The berry weight has shown no difference at all.

VLIV INTENZITY HNOJENÍ A VYUŽITÍ NA DRUHOVOU DIVERZITU A KVALITU TRAVNÍHO POROSTU

The objective of the paper is to assess the species composition of grass stands used under regime of two and three cuts, the grassland species diversity and the grassland quality at different levels of nutrition. The experimental site is situated in the Bohemian-Moravian Upland at an altitude of 650 m a.s.l. The subjects of assessment are two-cut and three-cut grass stands with diverse intensities of nutrition: unfertilized, 30 kg ha-1 P and 60 kg ha-1 K fertilized, fertilized with 90 kg ha-1 N+PK, and fertilized with 180 kg ha-1 N+PK. Studied characteristics were as follows: share of dominant species in the harvested herbage, species diversity of the grass stand and grass stand quality. Evaluated were years 2002-2006. The two-cut use promoted development of Dactylis glomerata. The three-cut use promoted development of Poa ssp. The share of Alopecurus pratensis was equable in the two-cut and three-cut grass stands. The dose of N90+PK promoted Dactylis glomerata and was insufficient to increase the share of Alopecurus pratensis and Poa ssp. Fertilization resulted in the decreased share of most present herbs but development of Polygonum bistorta was promoted, namely by the dose of N90+PK. In contrast, the application of PK promoted Trifolium repens. Fertilization had a significant (P < 0.05) influence on the share of individual species in the grassland. Three-cut grass stands exhibited a higher diversity than two-cut grass stands did. Fertilization had a significant (P < 0.05) influence on the decreased species diversity and on the increased grassland quality.

In the study the carcass quality of fast growing broilers (F) and slow growing layer males (S) was compared. The effect of age on the carcass quality of S (S1, S2) was also evaluated. The weights of the carcasses were as follows: F 1110 g, S at 90 days of age 1116 g (S1) and S at the age of 132 days 1878 g (S2). Despite similar carcass weight in F and S1, the weight of the breast, and it's proportion to the total body weight was significantly higher (P < 0.001) in F (265 g and 23.9% vs. S1 174 g and 15.6%). Continued fattening of the layer males resulted in increased breast weight (S2 276 g, P < 0.001) but not in breast proportion (S2 14.7%).
The weight of the legs was significantly higher (P < 0.001) in S1 in comparison with F, but it was due to the heavier weight of the leg bones in S1 (P < 0.001). There was no difference neither in the weight of the leg muscles, nor of the leg proportions between F and S1. The proportion of the leg muscles increased significantly (P < 0.05) in S2 (25.6%) in comparison with S1 (24.1%). The content of abdominal fat, fat in the breast and fat in the leg muscles was significantly lower (P < 0.01, P < 0.01, P < 0.05, respectively) in the layer males S1 in comparison with the F broilers. The proportion of abdominal fat was 1.79% in F, and 0.54% in S1. The content of the breast fat was 1.24% in F and 0.56% in S1. The proportion of fat in the leg muscles was 8.45% in F and 2.78% in S1. As the birds became older, the content of the fat increased: the abdominal fat in S2 - 1.38% (P < 0.01), the breast fat in S2 - 0.96% (P < 0.01) and the leg muscles fat in S2 - 3.94% (P < 0.05). There was significantly lower (P < 0.001) content of dry matter in S1 than in F both in the breast and in the leg muscles.
At the same carcass weight as the broilers, the layer males had a lower proportion of breast meat and also a lower content of abdominal fat, fat in the breast and fat in the leg muscles. The proportion of the leg muscles was comparable between the two groups. Concerning meat production, the quality of the carcasses of the layer males improved with age. Comparing the F carcasses with weight at 1110 g with the S2 carcass with weight of 1878 g, the weigh of the breast was almost the same, the weight of the leg muscles was higher in S2, and mainly the content of the fat in leg muscles was lower. The content of the abdominal fat and the breast fat was similar in both groups.

Soil organic matter (SOM) undergoes short and long-term transformation in the soil. Microorganisms through their enzymes are able to mineralize organic carbon while the rate of this process is different. Biological test though referred to one of the main diagnostic methods for evaluating soil quality/health. The aim of our work was to determine basal respiration, total carbon content, fractional composition of humus and basic parameters of soil colloidal complex in selected subtypes of chernozem in South Moravia region. Basal respiration was measured using Vaisala GMT220 apparatus. Total carbon content was determined by oxidimetric titration and basic parameters of soil colloidal according to Mehlich. Results showed that production of carbon dioxide varied from 0.09 to 0.27 mg CO2/100g/h. Linear correlation between basal respiration and humification degree was found. Humus content varied from 2.15% to 4.6%. No correlation between quantity of humus and basal respiration was observed. Higher values of basal respiration were connected with higher quality of HS. Significant linear correlation between total carbon content (TOC) and cation exchange capacity (CEC) was found.
